Baking is a special kind of cooking. You bake things in the oven. Most baking uses three things. Flour, water and air mixed together. You bake a cake, bread, biscuit, bagel or pie. Each one of those has a mix of flour, water and air. That mix is called dough.

There may be other things in dough like butter or eggs. The oven helps control the air in the dough. Using yeast puts in air. Yeast has good bacteria that make bubbles. You can add air by adding baking soda. It mixes with other things to release air.

Cake and bread have a lot of air. A bagel has less air than bread. A piecrust doesn’t have much air at all.
